For those who just can't wait until the bulbs are ready in the summer time, green garlic is a great supplement. Green garlic, which is essentially immature garlic, is best described as a garlic flavored green onion. All parts of the plant can be consumed: stalk, stem, bulb, and leafs.
It can be used in any cuisine garlic and onions are used for, especially for raw dishes.
Storability: 1-3 months (refrigerated)

By far the most popular porcelain hardneck in Ontario, our Music is considered our mildest and most traditional garlic flavor. It can be used in almost any recipe and is popular for pickling. Clove and Bulb wrappers are a shiny beautiful white, but can be slightly pink in hot and dry summers. The bulbs are normally large with anywhere from 6-15 cloves.

Considered one of our hottest and tastiest garlic, the Yugoslavian Red (Yugo) is our personal favorite. This Porcelain variety garlic has a pungent taste and initial heat when eaten raw. Perfect for dishes where garlic is the highlight of the recipe. It usually has beautiful red-purple stripe clove wrappers. There are 4-8 large cloves per bulb. Ready for pick-up in early August.

The Portuguese Azores, a porcelain, is now our biggest and plumpest bulb. With a taste similar to our music variety, people choose the Azores for it's a size. Cloves wrappers are white with 4-10 cloves per bulb. Ready for pick-up early to early to mid august.
